If you’ve seen my toddler, then you know he loves to eat. We joke that he’s a “carbivore” and he regularly requests a sandwich without peanut butter {aka two slices of bread}. He loves fruit, not many veggies unless french fries count, and could probably live off of chicken nuggets/hot dogs/lunch meat/cheese sticks if we let him. Needless to say, I was excited to find out this recipe could go into the mix. It receives bonus points for storing well for leftovers or baking ahead of time! Momma has even been known to eat a bite or two for lunch.
Mac + Cheese Bites
Looking for a kid-friendly alternative to the usual chicken nuggets, hot dogs, or cheese sticks? These easy bites were the answer for my picky toddler!
Ingredients
- 1/2 lb noodles
- 2 tbsp butter
- 2 tbsp flour
- 1 1/2 cups skim milk
- 2 cups shredded sharp cheddar
- 2 ounces light cream cheese
- 1/2 tsp sea salt
- 1/4 tsp ground pepper
- 1 egg beaten
Instructions
- Preheat oven to 400F.
- Lightly spray mini muffin tins with cooking spray or oil.
- Cook noodles according to package directions.
- In medium pan, combine butter and flour over medium heat until smooth. Gradually add milk to simmer. Add 1.5 cups cheese, cream cheese, salt, and pepper. Stir until creamy. Remove from heat.
- In large bowl, stir pasta, cheese mixture, and egg until pasta is coated.
- Scoop finished mixture into mini muffin tins and top with sprinkle of cheese.
- Bake approximately 15 minutes or until golden brown edges.
- Cool before removing bites from pan.
